Food Safety at Home

4 Basic Steps for Food Safety

Each year millions of people get sick from food illnesses which can cause you to feel like you have the flu. Food illnesses can also cause serious health problems, even death. Follow these four steps to help keep you and your family safe.
1. Clean
Woman cutting vegetablesAlways wash your food, hands, counters, and cooking tools.
  • Wash hands in warm soapy water for at least 20 seconds. Do this before and after touching food.
  • Wash your cutting boards, dishes, forks, spoons, knives, and counter tops with hot soapy water. Do this after working with each food item.
  • Rinse fruits and veggies.
  • Clean the lids on canned goods before opening.
2. Separate (Keep Apart)
Keep raw foods to themselves. Germs can spread from one food to another.
  • Keep raw meat, poultry, seafood, and eggs away from other foods. Do this in your shopping cart, bags, and fridge.
  • Do not reuse marinades used on raw foods unless you bring them to a boil first.
  • Use a special cutting board or plate for raw foods only.
3. Cook
Foods need to get hot and stay hot. Heat kills germs.
  • Cook to safe temperatures:
    • Beef, Pork, Lamb 145 °F
    • Fish 145 °F
    • Ground Beef, Pork, Lamb 160 °F
    • Turkey, Chicken, Duck 165 °F
  • Use a food thermometer to make sure that food is done. You can’t always tell by looking.
4. Chill
Put food in the fridge right away.
  • 2-Hour Rule: Put foods in the fridge or freezer within 2 hours after cooking or buying from the store. Do this within 1 hour if it is 90 degrees or hotter outside.
  • Never thaw food by simply taking it out of the fridge. Thaw food:
    • In the fridge
    • Under cold water
    • In the microwave
  • Marinate foods in the fridge.



Think you have a food illness?

Call your doctor and get medical care right away.
  • Save the food package, can, or carton. Then report the problem.
  • Call USDA at 1-888-674-6854 if you think the illness was caused by meat, poultry, or eggs.
  • Call FDA at 1-866-300-4374 for all other foods.
  • Call your local health department if you think you got sick from food you ate in a restaurant or other food seller.

Who is at risk?

Anyone can get sick from eating spoiled food. Some people are more likely to get sick from food illnesses.
  • Pregnant women
  • Older Adults
  • People with certain health conditions like cancer, HIV/AIDS, diabetes, and kidney disease
Some foods are more risky for these people. Talk to your doctor or other health provider about which foods are safe for you to eat.

In season produce may taste better + cost less.

Summer in Michigan provides an abundance of colorful produce to choose from and tons of farmers markets to find your favorites.
Fruits and vegetables are an important part of to a well-balanced, nutrient dense diet. They are nature’s fast food and provide many vitamins, minerals, antioxidants and fiber for overall good health.
The goal is at least five-a-day for better health, choosing from a rainbow of delicious colors daily.

Best in Season

As far as the nutritional value of fruits and vegetables, if fresh is not an option at the time, frozen is the next best choice. Canned fruits and vegetables would be your third best option, but really, it is better to have them any way you can.
I would like to see you eating fruits and vegetables. Period.  But don’t forget,  if you are purchasing canned vegetables, try to get the “no salt added” variety for better health.

There are so many different kinds of produce that it is sometimes hard to keep track  of what is in season. Here is a list of fruits and vegetables that are in season this summer in Michigan:

Beef & Broccoli

Take the pressure out of dinner prep every night this week, thanks to the Microwave Pressure Cooker!

Yield: 6
Serving Size: 4 oz./115 g steak served with broccoli & sauce
Ingredients

  • 1½–2 lb./680 g–1 kg flank steak, cut into 4 quarters
  • 1 tsp. of our Steak & Chop Seasoning
  • 4 garlic cloves, peeled and minced in Chop ’N Prep Chef
  • 1¾ cups beef stock, divided
  • ½ cup low-sodium soy sauce
  • 1 tbsp. sesame oil
  • ¼ cup brown sugar
  • 3 tbsp. corn starch
  • 14-oz./415 g bag frozen broccoli florets
Instructions
  1. Season steak with seasoning and place in base of Microwave Pressure Cooker.
  2. In a medium bowl, combine garlic, 1½ cups beef stock, soy sauce, sesame oil and brown sugar. Pour over steak. Add extra stock if meat is not fully submerged. Seal and microwave on high power 30 minutes.
  3. Remove from microwave and allow pressure to release naturally until red pressure indicator fully lowers, about 10–15 minutes. Remove steak to a cutting board and pull apart using 2 forks.
  4. In small bowl, whisk together corn starch and remaining ¼ cup beef stock. Whisk into warm liquid in base of Pressure Cooker.
  5. Stir frozen broccoli into liquid in Pressure Cooker. Seal and microwave on high power 5 minutes.
  6. Serve warm and over rice, if desired.
